Spring is near and the Husbands are here to kick things into high gear. Open your windows and let in some fresh air—the birds are singing, the sun is shining, and it’s a beautiful day outside. It’s the beginning of California Avocado season and we have a new pasta recipe that is colorful, delicious, and filled with seasonal produce that we are excited to share with you. We are always up for a challenge, and when California Avocados asked us to create a new dish that uses little to no food waste, we got busy testing in the kitchen and came up with… dare we say a pasta paragon? Let us explain.

We all have food memories that make us smile. Since starting our blog in 2015, we have learned so much from our audience and the community, and it is truly inspiring to be a part of this creative space where we can all learn from each other, cook together, and drool over everyone’s photos on social media—even from opposite sides of the planet. We’re excited to share this recipe with you today: it’s cool, minty, chocolatey, and delicious, and the frosty emerald green color from the California avocados will look quite elegant in your hand at your next summer party.

Last month we flew to New York for two fun events to promote our cookbook. The city was clearly showing off for us that week, with blue skies, warm Spring temperatures, and blossoming cherry trees covered with pink and white flowers on every corner. It rained the morning we left—but more on that in a moment. We arrived on a Wednesday evening and were both exhausted from waking up at 4am to catch an early flight to the east coast. No matter how long and uncomfortable the plane ride felt, we kept reminding ourselves that we were just a few hours away from thin slices of New York pizza.
