Today we are bringing you a taste of the tropics! This morning we shared our recipe for tostones with spicy mango salsa, the perfect appetizer to go with this light and refreshing cocktail by @apartment_bartender! Made with light rum, fresh mango purée, tangy lime juice, and a hint of vanilla, this colorful drink is topped with a splash of soda for a festive bubbly sparkle. With his caribbean-inspired cocktail and a platter of fresh crispy tostones topped with spicy mango salsa, our Saturday night is off to a delicious start, and you are all invited!

Mango Cooler

2oz light rum
2.5oz mango purée
3/4oz lime juice
1/4oz vanilla syrup
club soda

garnish:
sprig of mint
mango cubes

To make the mango purée: peel 1 to 2 mangoes, then cut the fruit from the seed and place the fruit in a food processor or blender. Blend until smooth.

To make each drink: Combine the rum, mango purée, lime juice, and vanilla syrup in a cocktail shaker, then fill with ice and shake vigorously for 15 seconds. Strain into a collins glass filled with ice, and top with a splash of club soda. Garnish with a sprig of mint and a few mango cubes as desired. Enjoy!
