We have two big reasons to be excited today. The first involves this week’s travel plans, and the second one is pie. On Friday morning, we’ll be packing our bathing suits, sunscreen, and snorkeling gear and heading to the British Virgin Islands with Ryan’s family. In less than seventy-two hours, we will be sitting on a gently rocking boat, sipping topical painkillers, sampling fresh fruit and local Caribbean cuisine, and exploring beautiful coral reefs near white sand beaches. We’ll be taking a week off from posting recipes here on the blog, but would love for you to join us as we sail the high seas, so follow along on snapchat (@husbandscook) and Instagram to see fun highlights from the trip. I will not let today be one of those days. It is not even 8am and I’ve already broken a beautiful glass mug (a wedding present engraved with our initials), locked myself out of the house (forcing Ryan who is sick with the flu to jump out of bed while feverish and shivering to let me back inside), then accidentally set off the piercingly loud house alarm while going out to the garage to finish laundry. I refuse to let the day continue like this. I need to be a compassionate doctor, take care of my sick husband, and let him rest quietly without shattering glass and setting off deafening alarms! So let us pause for a moment while we take a deep breath together, and as we slowly exhale, we let go of our worries and stresses, allow them to all disappear, and conduct the day in a calmer and quieter direction.

Ahhh, much better.

Thanksgiving is less than two weeks away, and there are some important pie-decisions to be made. For us pumpkin pie traditionalists, overly-complicated recipes using fancy ingredients are fine, but sometimes you just want the familiar and classic version. This ultra-creamy and smooth pie is just that: spiced with cinnamon, nutmeg, dark brown sugar, ginger, and allspice, this dessert has a dreamy, custard-like texture and genuine pumpkin flavor. If you have never made a pie before, this should be your first, as it could not be easier to make. All the filling ingredients are simply mixed in one bowl, you pour it in the pan, and bake it. This year we tried something a little different and are excited to share our discovery that keeps the spirit of the original, while adding a little extra… flare!
