3-ingredient molten dulce de leche cake

At this very moment, there are fifteen singers making beautiful music in our living room on this breezy Sunday afternoon. It is always a treat when Ryan’s choir rehearses here. Their resonant voices fill the house with rich harmonies and an uplifting spirit that purifies the soul. It is a gorgeous spring day and our windows and doors are wide open, so between songs, dozens of birds fill the gaps of silence with their inconspicuous melodies. The group is practicing a short, three-song set for a podcast they are recording next weekend including a powerful rendition of Ray Charles’ “Georgia On My Mind.” It has been quite entertaining around here as the house has been filled with guests all week. On Thursday night we threw a fancy outdoor dinner party for thirteen of our friends, including a seven course meal, three different kinds of cocktails, and strawberry shortcake with homemade vanilla ice cream for dessert. We knew this week would be busy, so when planning our blog schedule, we wanted to find something delicious, yet simple. Like three ingredients simple. Well, we hit the jackpot.

We love where we live. Eagle Rock is a thriving artistic community just twenty minutes from downtown L.A. Our quiet neighborhood is tucked away up in the hills far from the noise and traffic, surrounded by tall trees and expansive views. And though the city is nearby, it doesn’t feel that way, especially with the variety of wildlife that live in the area. Just the other evening, we had our second close encounter with a skunk!

pumpkin whoopie pies with maple marshmallow cream

Fall is our cat’s favorite time of year. As the weather starts to cool, she likes being indoors with us, watching the leaves change colors, listening to the soothing sounds of an occasional southern California rain (when we are lucky), and enjoying the cozy, fragrant aromas of freshly baked pies and hot apple cider. But most of all… Sylvia is obsessed with pumpkin! We gave it to her as a kitten, and now she loves it so much that we have to be careful saying the word around her. We’ll have to figure out something soon, because now she’s starting to catch on when we spell out P-U-M-P-K-I-N. This dessert—which features her favorite ingredient—caught our attention three years ago while it was circulating the internet with its extraordinary photo and dreamy title, and there is no excuse why we haven’t made it until now, especially with a name that is so appealing and fun to announce: pumpkin whoopie pies with maple marshmallow cream.

Actually, the full title should be chocolate cupcakes with peanut butter chocolate chip cookie dough and toasted marshmallow, but that would be too over the top… Kind of like these incredible treats, in which a dark chocolate cupcake is topped with a ball of peanut butter chocolate chip cookie dough, before being draped in whipped marshmallow and then toasted to a deep golden perfection.

ginger key lime chiffon cake

When I was five years old, I was so excited to take my first cooking class at the local community center. We made so many fun recipes, but my favorite part was when we learned how to make a cake. I remember feeling then—and I still feel now—a sense of amazement that you can take all these powders and liquids, mix them up, add some heat, and end up with a sweet and delicious cake. The first time I made this ginger key lime chiffon cake was for my birthday a few years ago, and from the first bite I was hooked (yes, I love to bake my own birthday cakes!). There are three layers of pillow-soft gingery chiffon, a rich and surprisingly tart key lime curd filling, and the entire cake is generously frosted with a silky smooth key lime buttercream.  –Ryan
