Is there a word for a meat-eating vegan? This describes our nine-year-old niece Lucia, who can eat anything except for eggs and dairy. Last week she took her first solo flight from Portland, Oregon to visit her favorite uncles, and we packed in four days of fun activities from the moment she stepped off the plane. Cooking pancake breakfasts together, riding every rollercoaster at Disneyland, hand-feeding tropical birds at the Long Beach aquarium, and watching the sunset (with cotton candy) from the Santa Monica Pier—we let her choose the itinerary, and had an unforgettable time. But the best part was having Lucia join us on Instagram Live last Friday for our most adorable episode yet! After eating a year’s supply of desserts on our weeklong Alaskan cruise, we told ourselves we’d go easy on the sweets once we came home. That didn’t happen. Just a few days after returning, we hosted a cookie swap at our house, resulting in dozens of leftover treats. The problem was, they were all so delicious and we felt so guilty disposing these handcrafted creations, that we were left with no choice but to eat every last one. The cookie party was for a photoshoot which will be included in a special upcoming holiday issue of Bake From Scratch Magazine—more on that later. There was hardly any room in our refrigerator to store this wealth of cookies since most of the space was being occupied by mountains of vegan berry pavlovas that we made the day before. And it didn’t stop there: the calorie-party continued… Over the weekend, we tested a salted caramel dessert for an another upcoming project that we will be announcing soon. Plus there was a rich and fudgy chocolate cake which will be making an appearance here in the next few weeks. But the final thing that tipped the scale was the huge batch of butterscotch caramel corn we whipped up on Sunday. Allrecipes had invited us to take over their Instagram account to post photos and videos throughout the day, showing tips on how to make this favorite recipe of ours. And despite the plates of cookies, piles of pavlovas, fudgy chocolate cake, and caramel treats that bombarded our kitchen counter like an overstocked bakery, every last bite of the baked butterscotch caramel corn was eaten.

First we grab the ladder from the garage. It only gets used once a year; always on the same day, and for the same reason every time. We prop it against the front of our house, then Ryan climbs onto the roof, reaching his arms down so Adam can hand him the treats we’ve picked out for this year’s annual spectacle.
Would you believe us if we told you there is a homemade bread you don’t have to knead, there are absolutely no thermometers involved, and the prep takes just five minutes? If we were to expand further, mentioning that this masterpiece exhibits a perfectly crispy, buttery crust, and the most pillow-soft, delicious chewy interior, you might think we were making this all up.

We both came out to our parents soon after we started dating. Three months after our first kiss, Ryan flew to Oregon to visit family for Christmas. He had just turned twenty and still hadn’t revealed his secret to anyone back home, but he had met someone special and wanted to share the excitement with his parents. After days of anxiously waiting for the right moment to tell them, it finally presented itself: they were sitting quietly in the family room, reading after dinner. He paced outside the door rehearsing the words he had practiced a hundred times in his head. After one last deep breath, he walked in and took a seat on the couch.
“I have something to tell you.”
They both looked up from their newspapers and said nothing, waiting for what was coming next.
“I met someone at school this semester.”
Silence. His heart was racing.
“…and his name is Adam.”
His mom just smiled. “We’ve always known, we were just waiting for you to tell us.”
The entire family was supportive from day one—even Ryan’s grandmother, a devout Catholic in her 80’s, loved and accepted Adam like a grandson, greeting him every time with huge hugs and home-cooked tortilla con papas. We both feel fortunate to come from such loving and accepting homes, but for many people, this is not the case. So in honor of National Pride Month, we created a rainbow recipe to spread awareness about a campaign that is helping LGBT kids around the country.
