Is it December yet? 2020 has been a heck of a year. We hope you and your loved ones are safe and healthy. We know several friends who have caught the coronavirus, so we are taking this pandemic very seriously. We are staying home as much as possible and haven’t even been to the grocery store since March. Instead, we have been using curbside pickup and buying products online. We rarely order takeout and have been cooking up a storm at home, so we’ve stocked our cupboards with bulk items to make a variety of meals at a moment’s notice. We have an entire cabinet with meticulously labeled glass jars filled with quinoa, lentils, oats, pastas, flours, an assortment of grains and rice—and of course, the dark chocolate chips that Adam claims are an essential part of his daily nutritional needs. We also keep plenty of canned goods in the pantry, like black beans, whole italian tomatoes, and coconut milk, so we can enjoy dishes like our colorful Caribbean Black Bean Salad, garlicky Pasta Puttanesca, or the easy Indian Curry with Chickpeas and Cauliflower from our cookbook any night of the week. There are dozens of delicious meals you can whip up by simply keeping a few kitchen staples on hand. This new recipe has been on repeat in our house for the past several months, and it comes together in less than 30 minutes. Breakfast, lunch, or dinner—this vegan frittata is a clear winner.

A quiet morning. The sun is just beginning to rise. A deep red glow graces the horizon as the last flickering stars slowly disappear one by one into a tranquil blue sky. A few small birds greet their busy day with sweet songs, easing the transition from a mysterious dark night into a radiant warm morning filled with optimistic melodies. The pot of coffee that you started before you stepped outside to enjoy the fresh air is now ready, and the inviting aroma lures you back into the house. You pour a cup, take your first sip, and everything in the world feels exactly right at that very moment. Your significant other is still warm and comfy, fast asleep in the other room, and you feel inspired to surprise them with a special breakfast when they wake up. It is Saturday so you want to start your weekend off with something memorable. Something delicious. Well this week we hit the recipe jackpot with a creation that is all of those things and more. Although we didn’t get a white Christmas while visiting Portland, we had an unexpected white New Years in Los Angeles. On the first day of January, we traveled above the city where everything is peaceful and quiet and the air is clean and smells like fresh pine. We are so lucky to be just thirty minutes from The Angeles National Forest with gorgeous mountains and countless places to explore, stretching over 1000 square miles of uninhabited land. We found ourselves strolling through icy trails lined with beautiful manzanitas and majestic oaks still dusted with snow from last week’s brief rains. The hike began at 4500 feet, and while we were expecting chilly temperatures, we had no idea that we would be walking in snow! But the sun was out, it was a beautiful day, and we enjoyed peanut butter and honey sandwiches sitting on a boulder on the side of the trail while soaking in the sun’s rays. After a brief drive back into civilization, we came home to put the final touches on an original new recipe, a warm and comforting skillet of tender cauliflower, sautéed leeks, diced tomatoes, bright red chard, and poached eggs nestled between the vegetables, which is topped with deeply toasted pine nuts and a dollop of lime-infused Greek yogurt: say hello to winter shakshuka.
On a bookshelf next to our kitchen, you will find a large green binder containing 204 pages of recipes (we recently counted!) which we have been collecting over the past ten years. It is filled with scribbled notes, comments, and detailed descriptions of where they came from. It is meticulously alphabetized and divided into six categories: Main Courses, Sides, Cakes, Cookies, Other Desserts, and Breakfasts. On the thirtieth page of the Sides section, nestled comfortably between a no-mayo potato salad from Rachael Ray and a Puerto Rican pique sauce, lies this glorious sweet baked dish. And at the bottom of the recipe is a handwritten note from December 2010 declaring it the “best kugel we have ever had.” This traditional noodle casserole adapted from Gourmet Magazine stole the show at our Hanukkah party five years ago and we have continued to make it every year since.
