Spring is springing, and the Husbands are singing. It’s the peak of California Avocado season and we have a new recipe featuring this fabulous fruit, filled with golden sunshine and ready to light up your table! It’s been fun partnering with California Avocados this year—in March, their theme was creating dishes that use little to no food waste, and we made a delicious hearty pasta that comes together in just minutes. This month’s theme is “heritage cooking,” so today we’re excited to share a tasty new recipe that reminds us of home. Adam grew up in Southern California and Ryan has lived here for more than half his life, so Mexican cuisine has always been an integral part of our relationship—whether we’re ordering vegan tacos from a local food truck on a Saturday date night, or enjoying chiles rellenos and jalapeño-cucumber margaritas at one of our favorite Mexican restaurants around town. Pack your sandals and extra pairs of shorts, and don’t forget your sunglasses, because today you’re taking a trip to Southern California to enjoy a little taste of our neighborhood. Yes, you’ll probably spot a celebrity or two, but the highlight of your trip will certainly be this star. Will you please welcome to your table… Kimchi Quesadillas with Swiss Cheese and Avocado.

We all have food memories that make us smile. Maybe it’s a special cake that your grandmother prepared for every birthday, or the fall aromas of pies baking in the oven that fill the house during the holidays. Or perhaps it’s the entrée from a memorable romantic meal, and you can still picture the flickering candles glowing in the room. Everyone has special moments that we cherish because food is an expression of love. It brings people and families together and it’s a way for us to connect and learn about other cultures and unique flavors from all around the world. Since starting our blog in 2015, we have learned so much from our audience and the community, and it is truly inspiring to be a part of this creative space where we can all learn from each other, cook together, and drool over everyone’s photos on social media—even from opposite sides of the planet. We’re excited to share this recipe with you today: it’s cool, minty, chocolatey, and delicious, and the frosty emerald green color from the California avocados will look quite elegant in your hand at your next summer party.

chocolate avocado pudding

For those of you who made it past the unexpected title, welcome! You are in for a treat. One of our favorite restaurants to visit on special occasions is The Stinking Rose. They are famous for menu items like their 40-clove garlic chicken, but since we are both vegetarian, we choose from the array of garlicky pasta selections on the menu. The meal officially begins when the server delivers bagna cauda to the table: a hot iron skillet sizzling with roasted garlic which spreads onto crusty slices of baguette like smooth butter. If you still have room after the main course, you cannot leave without trying their famous garlic ice cream with caramel molé sauce. As odd as it may sound, it is actually quite delicious, and from this eclectic eating experience we have learned to not judge a dessert by its title. While some of you may think that mixing avocado and chocolate is sacrilege, let us assure you it is quite the opposite. In fact, if you didn’t know there was actually avocado in this chocolatey dessert we are sharing today, you would probably never guess. With just eight simple ingredients, this creamy no-bake pudding is here to shock your mind and your mouth.
